Clam fritters

Ingredients
400g all-purpose flour
2 tsp baking powder
1 tsp salt
¼ teaspoon ground black pepper
1 tin (280g) minced clams
milk
2 eggs, beaten
1 tbsp melted butter or margarine
oil for deep frying

Method
1. Sift together flour, baking powder, salt and pepper.

2. Drain clam broth into a 1 cup measuring cup; add enough milk to make ¾ cup.

3. Add broth mixture to beaten eggs; stir into sifted flour mixture and beat well.

4. Add clams and melted butter or margarine. Drop by spoonfuls into hot, deep fat heated to 190ºC and fry until golden brown.

Serve with chilli sauce. Serves four.
