Bachelor wings
Ingredients
12 chicken wings
1 bulb of garlic, smashed
Tabasco sauce
A few cili padi, bruised
Vinegar or Italian salad dressing
Juice from a couple of lime
Thai chilli sauce
Tomato sauce
A sprinkle of sugar
Dark soy sauce
Sea salt
Freshly crushed black peppercorns
Sarawak pepper sauce (optional)
Method
1. Mix everything in a large bowl.
2. Taste a little of the marinade. The taste of hot, sour, salty, sweet and the 'kick' should be balanced to your liking. No rigid measurements here.
3. Add the chicken wings into the marinade and mix well.
4. Cover and leave in the fridge for at least 2 hours. Overnight is recommended.
5. Choose your preferered method of cooking:
a. Grill or barbecue over fire
b. Microwave grill
c. Frying in oil over medium fire
6. Baste with marinade while cooking.
Note: This makes a perfect snack for football nights and barbeque with the guys.
