Spicy steamed fish

Ingredients
500g red snapper/siakap
½ tsp salt
½ tsp cornflour
½ tablespoon Carotino oil

Marinate all the above for 10 minutes

Finely chop:
1 stalk bunga kantan
1 stalk lemon grass
5 red chillies
2 kaffir lime leaves
15g young ginger
2 pips garlic

Flavour enhancers:
½ tsp salt
1½ tbsp sugar
3½ tsp lime juice
1¼ tsp ikan bilis stock
¾ tsp cornflour

Grease plate for steaming with carotino oil
Decoration: coriander leaves

Method
1. Place fish on steaming plate. Add the finely chopped ingredients, the flavour enhancing ingredients and the oil.

2. Pour the spices over the fish and steam on high heat.

3. Decorate as desired and serve the dish hot.
