Coconut rice

Ingredients
2-3 cups cooked rice
1/2 cup grated coconut
4 dried chillies, cut into small pieces
1/2 inch ginger, finely chopped
curry leaves (2 sprigs)
1 tbsp mustard seed
1 tbsp urad dhal
3 tbsp cooking oil
salt to taste

Method
1. Heat oil in a wok. Fry mustard seeds till they splatter.

2. Add urad dhal, chillies, ginger and curry leaves. Fry for 3 minutes.

3. Add grated coconut and mix well for 5 minutes. Add rice and sprinkle with salt and mix well for 5 minutes. Serve hot.
