Ginger spice cocktail

Ingredients
Juice and zest of 3 lemons
5cm fresh ginger, crushed
3 tbsp sugar
Handful fresh mint leaves, plus extra for garnish
1 cup crushed ice
150ml vodka
4 x 375ml bottles Bundaberg ginger beer

Method
1. Crush together the lemon juice and zest, ginger, sugar and mint leaves.

2. Add vodka then top with ginger beer.

3. Garnish with extra mint leaves. Serve immediately.
