Baked apples with sweet almond crust
Ingredients
3/4 cup almond meal
2/3 cup firmly-packed brown sugar
1 1/2 tsp ground cinnamon
1 egg white
4 medium Golden Delicious apples, cored
60g butter
Vanilla ice cream
Melted butter, for greasing
Method
1. Preheat oven to 180°C. Lightly grease a medium shallow baking dish with melted butter.
2. Combine almond meal, sugar and cinnamon. Mix well.
3. Beat egg white in a small bowl with a fork until large air bubbles form.
4. Cut apples in half crossways. Dip the cut-side of apples into egg white and press firmly into almond mixture to form a thick topping.
5. Heat half the butter in a medium frying pan over medium heat. Place half the apples, cut-side down, into the pan and cook without turning for 4 minutes or until golden.
6. Remove and place apples, cut-side up, in the baking dish. Repeat using remaining butter and apples.
7. Bake apples for 10–15 minutes or until apples are just tender. Serve warm with ice cream.
