Vegetarian pau
Ingredients
For the pau:
500g wheat flour
11g instant yeast
2 tbsp Mazola oil
1/2 tsp salt
2 tbsp sugar
1 liter lukewarm water
10pcs of paper, cut into 5in x 5in square
For filling:
1 potato, peeled and diced
1 carrot, peeled and diced
1 tbsp curry powder
1 tbsp chilli powder
1/2 tsp turmeric powder
2 tbsp oil
salt to taste
Method
1. In a small bowl, mix yeast with sugar and dissolve them with a little lukewarm water. Set it aside.
2. In another big bowl, combine flour with the dissolved yeast. Add some water and knead the mixture until you get a soft dough. Divide the dough into 10 equal parts and leave aside for 1/2 hours.
3. In a wok, fry all the diced vegetables with 2 tbsp oil. Add curry powder, chilli powder, turmeric and salt, and let the mixture cook well. Stir occasionally to avoid the mixture sticking to the pan.
4. After 1/2 hour, take the 10 doughs and roll them thin. Scoop a spoon of cooked vegetables into the centre and fold all sides. Roll each of them into a ball. Slowly press the bottom of the balls on your palm and place each of them on a piece of paper.
5. Arrange the pau on a steamer and steam for 10 to 15 minutes.
Serve hot with tea or coffee.
