Pumpkin pie filling

Ingredients
1/4 pumpkin (average size)
2 medium potatoes
1 small carrot
1 large onion
3 to 4 celery leaves
2 or 3 tbsp virgin coconut oil
1/2 cup water

Method
1. Cut all the ingredients into small cubes. Put them into a bowl, add salt according to taste and a teaspoon of white pepper. Mix everything together and leave them for a while.

2. Heat a pan or small kuali with virgin coconut oil, add all the chopped vegetables and water. Cover the pan and cook using low heat. Stir occasionally.

Note: Besides as filling for pie, this mixture can also be enjoyed with chapati, bread or even rice.
