Oyster Salad with Champagne Dressing
Ingredient
Dressing:
Good quality mayonnaise, or make your own by whisking 2 egg yolks with olive oil and lemon juice,
1 dozen oysters
Raddichio leaves
Romaine leaves
Rocket leaves
Baby spinach leaves
1/2 glass of good quality champagne or sparkling wine
Method
Shuck the oysters and retain their liquor. Pour the oyster liquor into the mayonnaise and the champagne also, mixing vigorously. Add a dash of pepper. Arrange the salad in 3 plates and divide the oysters, 4 to a plate. Drizzle with champagne dressing and serve immediately.
