H: Get sweet on honey

H IS FOR HONEY. For many, many years this was "the universal sweetener", almost the only means of sweetening food in various countries.

Ancient civilisation looked upon the making of honey as a miracle and even today, after much scientific research, honey remains something of a mystery.

The colour and flavour are determined by the type of flower from which the nectar originated.

Honey enriches and adds subtle flavours to many savoury dishes. Modern chefs use honey in many of their dishes - from salads to barbecued foods to stirfried fusion food and also in delicious desserts.
