Ingredients:
1000gm basmathi rice
100ml evaporated milk
1,600ml water
1 tsp vegetable ghee
3 tsp carotino oil
1 tsp jintan putih (cumin)
3 cinnamon stick
1 star anise
5 cardamoms
3 stalks curry leaves
Slice:
5 shallots
5 pips garlic
3cm ginger
Make a paste with:
1 tsp curry powder
2 tsp water
2 cubes chicken stock
1½ tsp salt
Method:
1. Heat the oil. Fry the spices, the onions, curry leaves and pandan leaves. Add the jintan putih (cumin) and the paste, fry till fragrant.
2. Add water, milk, chicken stock and salt. Let it simmer.
3. Add the rice and allow it to cook.
