Ingredients:
1/2 chicken
5 bunches pucuk ubi
300gm shallots
50gm lengkuas
30gm ginger
150gm serai
20gm garlic
coconut milk from 2 coconuts
100gm cili padi
10gm cinnamon
10gm star anise
Salt and sugar
Method:
1. Wash pucuk ubi (use young leaves only).
2. Dice chicken meat into small cubes. Blend finely the shallots, lengkuas, ginger, serai, garlic and cili padi.
3. Heat kuali and put in santan and blended ingredients together with cinnamon, star anise, salt and sugar to taste.
4. Mix thoroughly, stirring till mixture becomes thick. Add pucuk ubi and simmer until cooked.
Serve with hot rice.
