MAKAN KITCHEN:Be spoilt for choice at the bazaar-themed Ramadan buffet in DoubleTree by Hilton
DINERS will be spoilt for choice at Makan Kitchen this Ramadan. Until tomorrow, the eatery at DoubleTree by Hilton is offering some 200 dishes at its bazaar-themed buffet spread.
Makan Kitchen's executive junior sous chef, Fazli Baharudin, said the theme was chosen as the Hilton group wanted to serve everything under the sun.
"We are offering food that ranges from international cuisine to local food popular with foreigners like biriyani to kampung specialties like bubur, kerabu and ulam," he said.
One of the highlights is ketam lemak masak nenas, or local flower crabs cooked in turmeric and coconut. The end result is a rich and spicy, sweet and sour dish that retains the flavour of the crab.
Also recommended is the biriyani gham that uses lamb shank rather than chunks. Inspired by Johor's biriyani gham, a mixture of Malay and Indian herbs, the dish is a crowd favourite.
Another popular item is the beef masak itam. Its dark and thick gravy is a sumptuous addition to white rice and vegetables like kerabu and ulam.
Appetisers include kerabu hati ayam and kacang panjang, kerabu daging pangang and mangga muda dan kerabu petai muda dan ikan bilis. Soups to try include sup tulang rawan dan kentang dengan lobak merah, which is thick and spicy beef short ribs that are brothed with potatoes.
Among the traditional Malay fare is kerutub daging, ikan patin masak tempoyak, petola tumis air, gulai ayam kampung, udang goreng berlada and ayam panggang percik.
If your preference is Indian cuisine, there are masala prawns, a variety of breads like naan and chapati as well as tandoori chicken.
Also try the Portugese devil chicken curry and pansuh manuk or marinated chicken stuffed and cooked in bamboo shoots.
From the Chinese kitchen, the star dishes include dim sum, duck or venison withblack pepper and chicken cooked in lotus leaves
For dessert, try the chef's umph Ali, a Lebanese version of bread and butter pudding. There is also a variety of fruit, kuih and western fare like ice cream and cake.
The feast is priced at RM98++ for adults and RM48++ for children aged 12 years and below.
