A cake befitting a Sultan

JOHOR BARU: How would a cake for an esteemed Sultan look like? For Pulai Springs Resort pastry chef, Mohd Nor Yusoh, it has to be filled with the most decadent of ingredients aside from being meticulously designed.

With this in mind, Mohd Nor came up with the idea of chocolate brownies in the form of the two tigers that flank the Johor state emblem.

Of course, the tigers should be able to move and roar, just like the real deal.

Mohd Nor said he realised his idea for the cake with the help of his team from the resort.

The 10kg sweet treat will be among many gifts that will be presented to Sultan Ibrahim Sultan Ibrahim during the royal high tea event at Dataran Bandaraya here tomorrow.

“Sultan Ibrahim loves animals and none can better represent the Johor royalty other than the two tigers, named Dengkes and Tepuk, which are a part of the state emblem,” said the 50-yar-old pastry chef.

He said each year he challenges himself to bring something new yet nostalgic to the plate to enable the resort to present to the ruler the most fabulous of gifts for the Sultan’s birthday celebrations.

Mohd Nor thanked his team of assistant pastry chefs for sculpting the two tigers out of edible sugar called pastillas.

“We also had the resort’s engineering department to come up with the electronic features using lights and sound effects to bring the cake to life,” he said.

The single-tier cake is decked in royal blue icing and features natural embellishments as well as the state’s flag and the flags of all 10 Johor districts around the two tigers.

Mohd Nor said that last year, the Pulai Springs Resort presented a cake in the shape of a Bugis ship to Sultan Ibrahim.

“Our creation last year became the talk of the town. Hopefully the Sultan will be happy with the creation this year too,” he said.
