Savour spices of the Nusantara

KUALA LUMPUR: THOSE seeking authentic Nusantara fare will find it at Ancasa Hotel & Spa’a Fascinating Indonesian Food Festival, here.

Held at the Saffron Brasserie until Sept 15, the food festival is an annual event at the hotel, which has been promoting the food of Indonesian cities, such as Jakarta, Bogor and Minang, every year since 2011.

This year, however, the hotel has decided to offer the cuisine from all the various regions in one event.

Indonesian cuisine features a plethora of spices as the main cooking ingredient, and the tastes and flavours vary from region to region.

Ancasa Hotel & Spa Malay chef Mariam Ibrahim, who is whipping up the dishes for the promotion, said diners are assured of authenticity at the food festival.

“We have retained the original flavours of the Indonesian dishes,” said Mariam, who sources the spices from Jalan Chow Kit here.

“Indonesian food is easier and less complicated to cook than local food. It also uses less oil.”

To master the skills necessary to the task, Mariam took a two-week course in Indonesian cuisine.

“We will be rotating seven different menus during the promotion,” she said.

Mariam is assisted by chef de partie Hanipah Md Ali. They cook under the guidance of chefs from D’Jawa Resort, Bandung,

Diners can savour Indonesian dishes such as sate buntal, telor gembung padang, kambing tinoransak, ayam goreng kalasan, mangut kakap, udang pelalah, ayam betutu, ayam rica rica, gurame cobek, soto bandung, baso tahu bandung, mie kocok, perkedel jagung, semur daging, soto sulung, salads and sambal.

The Fascinating Indonesian Food Festival is available for lunch and dinner.

Lunch is served buffet-style at RM45 nett per adult and RM22 per child. The buffet features over 100 dishes daily.
