Kedah duo race against time to fulfill orders of 'Lemang Flyover'

ALOR STAR: With the Hari Raya Aidilfitri celebration just hours away, Mat Ridzuan Mat Saad, 34, and Fadzil Halif, 45, are racing against time to fulfil the 400 lemang sticks ordered by their loyal customers.

Apart from that, the duo, who have 15 years experience in the business, are also selling the lemang - glutinous rice cooked in hollowed bamboo stick - to walk-in customers.

Their stall is located under an overhead bridge in Sungai Korok here, with the hard to miss "Lemang Flyover" signboard.

Mat Ridzuan said it takes skills and experience to prepare the traditional delicacy; from selecting the right bamboo size, mixing the right combination of coconut milk and the sticky rice, to ensuring that the bamboos are cooked at the right heat.

"If any of these factors are not well taken care of, the lemang will not taste as good as it should be or some may not be properly cooked," he said.

Mat Ridzuan said he intends to complete the order by late evening while also attending to walk-in customers.

Meanwhile, a loyal customer Firdaus Che Ahmad, 29, said his family never missed getting the "Lemang Flyover" for Aidilfitri for the past 10 years.

"We only buy the lemang from here because we are confident of the quality of their lemang.

"Lemang is a very important traditional delicacy for Raya celebration, so my family will not risk buying from those we are unfamiliar with because of bad experiences of getting half-cooked lemang and so on." he said.
