Bubur lambuk... the milky way; UHT milk used as key ingredient

SHAH ALAM: The congregation at Section 7 mosque here today were treated to a special kind of Ramadan must have, the bubur lambuk, courtesy of Fonterra Brands Malaysia.

Instead of using coconut milk as the key ingredient to making the delicious, creamy and savoury porridge, the company used its Fernleaf UHT milk as a substitute.

While many were at first doubtful as they are more used to the taste of coconut milk, the twist to the bubur lambuk proved to be a crowd pleaser which saw most congregation coming back for more.

One of them was Nik Noraini Nik Abdul Rashid, who had gone back for second helping.

The 50-year-old said it was her first time hearing that milk was used to prepare the bubur lambuk.

“I was surprised but eager to try and I like it. It is as delicious as the bubur lambuk cooked with coconut milk,” she said.

Fonterra Brands Malaysia new product development, scientific and regulatory affairs director Megawati Suzari said the idea to incorporate Fernleaf UHT milk came after working with locals who are familiar with the cooking of bubur lambuk as well as the company’s food services division chefs.

“It came about as we found that there are similarities in terms of taste and texture between the Fernleaf UHT milk and coconut milk. When cooked with bubur lambuk ingredients, it produces the same taste but possesses different nutritional values.

“Fernleaf UHT Milk is a perfect substitute for coconut milk. It is healthier, tastier and creamier. Our chefs are always thinking of ways to incorporate our dairy products into the food that we consume. So our body will be able to gain the nutrients of milk in many ways,” said Megawati.

In the spirit of Ramadan, Fonterra also gave away 500 packs of bubur lambuk and iftar packs filled with dairy products such as Fernleaf CalciYum and Anlene Cafe Latte to the congregation and the local community made up of single mothers, the poor and orphans.

Megawati said it was important to have a balanced and wholesome diet, especially during fasting when key nutrients might be lost and a part of that would include dairy.

She said the best time to consume milk was before bedtime and during sahur (pre-dawn meal) as it’s able to nourish the body with protein, vitamins and mineral to keep one full and energised throughout the day.
